  • Special Edition – El sancochado (repetition)

Our Gastronomy is recognized for its standard of excellence worldwide. Recently and for the fifth year in a row, Peru was awarded the crown as the best culinary style in South America. In this occasion, Mundo Empresarial wanted to highlight one of the dishes that was originated in colonial times. The sancochado, which is offered in dozens of restaurants, is a fusion of the well known cocido form Spain with the timpu, which is a soup.

Nilo Do Carmo from Hotel Delfines commented that he likes to reach the standard that the old grandmothers and aunts had when they made it at their homes. From native potatoes, carrots and more, the diners choose what side to get. On top of this they can choose among a variety of sauces and additions offered in a wide array of restaurants and hotels.
